Meatless Loaf

Hey! Don't hate! This actually doesn't suck. As I descend further & further into my midlife crisis, I'm turning towards Meatless Monday's, less meat products, more all natural shit.


Don't knock it until you've tried it, and it's pretty damned cheap



Ingredients

2 Stalks celery, chopped

1/2 onion, chopped (or diced, whatever makes ya happy)

2 gloves garlic (or a decent scoop out of a jar of the diced shit)

10oz tofu (swallow your pride & buy it. . . it's in a fridge case at the store)

1/2 cup walnuts, ground or finely chopped

1/2 cup brown lentils (sold with the beans, stop looking)

1 1/2 cup quick oats (the fast-cook crap)

3 tablespoons soy sauce (or your cheap ass can use the ones you got from the Chinese place you have in a drawer)

1/4 cup + 1/2 cup ketchup (1/4 cup in the mix, 1/2 topping, you'll see)

1/8 cup brown sugar

Heavy squirt mustard

2 teaspoons parsley

1/2 teaspoon thyme

1/4 teaspoon sage (unless you're making this for Pop)

1/2 teaspoon rosemary

1 teaspoon oregano

1 teaspoon basil


How do I do this?

Oven 375


Simmer your lentils for 20min, drain.


Sauté your celery, onion & garlic with a smidge of olive oil about 5min, remove from heat.


In large bowl, mash your tofu (I use a wooden spoon), then add your cooked lentils/celery mix and everything else. Stir it around, mash it together, mix it up good.

Dump that shit into a 13x9 dish, form into a loaf. Surround that bitch with some carrots & cubed taters. Mix your other 1/2 cup katsup & brown sugar, then spread on top of your meatless loaf.


Bake for about an hour.
