Beef Stew!

It's snowing today (November 14th). I fuckin' love snow. With it comes assholes sliding off the road, people late for work, everyone bitching about it snowing (It's November in Ohio, why are you surprised?!) and mostly, some damned good comfort food! How about some set & forget beef stew! So easy, you can do it!
I like to set this up in the morning, when you come home from work, provided you don't have a faulty wiring problem on your crock pot and have burned your house down, it'll smell like heaven!

Ingredients
2lb stew meat
1 teaspoon salt
1 teaspoon pepper
1lb lil' red taters (or yellow, just the tiny bastards you find in a mesh bag), cut into quarters
1 bag frozen pearl onions (found with the frozen veggies, I can never find them fresh)
1lb baby carrots
1 jar beef gravy
1 14.5oz can diced tomatoes, undrained
Towards the end of the recipe:
3 tablespoons flour
Lil' bit of sour cream (a large scoop should do)
What to do, what to do. . .
In 6 quart or larger slow cooker, layer potatoes, onions and carrots. Add beef; sprinkle with any remaining spice mixture you'd like. I typically add garlic, red pepper flakes, whatever the fuck I'm feeling at that moment. Top with jar of gravy and can of tomatoes, juicy goodness & all. Cover; cook on Low heat setting 8 to 10 hours. (Make sure it's plugged in, you jack wagon)
About 20min before ready to chow, in small bowl, blend 3 tablespoons flour with sour cream. Spoon in a little stew juice and mix. Little more stew juice & mix. You want to heat the concoction without cooking it. Stir into stew. Increase heat setting to High; cover and cook 10 minutes longer or until thickened.
